Last week I started following a few new blogs and one of them happens to be a cooking blog called chef-in-training. She has some great recipes. While on her blog the other day, I came across this recipe for Cheeseburger Soup from therecipecritic.com.
This recipe was easy to make and tasted so delicious. Whenever I say that we are having a new recipe for supper I get quite a few moans and groans and the saying "I don't like that". But after tasting it, I had quite a few that loved it.
The recipe is as follows:
1 lb ground beef
3/4 cup chopped onion
3/4 shredded carrots
3/4 cup diced celery
1 teas. dried basil
1 teas. dried parsley flakes
4 T. butter, divided
3 cups chicken broth
4 cups peeled & diced potatoes
1/4 cup all-purpose flour
2 cups Velveeta cheese
1 1/2 cups milk
1/2 teas. pepper
1/4 cup sour cream
1.Brown ground beef in 3-quart saucepan. Drain and set aside
2.In the same saucepan add 1 T butter, onion, carrots and celery. Saute until tender.
3.Add the broth, potatoes and beef and bring to a boil. Reduce heat, cover and simmer 10-12 minutes until potatoes are tender.
4.In a small skillet melt 3 T butter and add the flour. Cook and stir for 3-5 minutes or until bubbly. Add to the soup and bring to a boil. Cook and stir for 2 minutes. Reduce heat to low.
5.Stir in the cheese, milk and pepper. Cook and stir until cheese melts. Remove from heat and blend in sour cream.
